Ingredients

Quick Chicken Tikka

  • 5 tablespoon plain greek yogurt (or thick curd)
  • 1.5 teaspoon garlic paste
  • ½ teaspoon ginger paste
  • 1.5 teaspoon kashmiri chili powder or paprika
  • ½ teaspoon red chili powder (hot), or cayenne pepper powder
  • ½ teaspoon garam masala powder
  • ½ teaspoon ground cumin
  • 1 tablespoon lemon juice
  • ½  teaspoon kasuri methi  (dried fenugreek leaves)
  • 1.25 teaspoon salt adjust to taste
  • 500 g boneless skinless chicken thighs cut into 1.5 inch pieces

Pizza Ingredients

  • 4 6 inch naan I use garlic naan
  • 1 cup pizza sauce I use store-bought
  • 8 oz shredded mozzarella cheese low moisture,
  • 1 small onion sliced (about ⅓ cup)
  • cup green bell pepper sliced

Instructions

  • Place all the listed marinade ingredients (except chicken) in a large bowl and whisk to smooth. Add the chicken and combine well. Cover the chicken and marinate for at least 1 hour. You could marinate the chicken tikka upto 18 hours.
  • Cook the chicken tikka on medium-high heat in a skillet or on the grill until charred and smoky. Cut the cooked chicken tikka in small bite size pieces.
  • Preheat oven to 400F. Place garlic naan on a parchment paper lined baking sheet or a pizza pan if you have one.
  • Spread 2-3 tablespoon of pizza sauce on the naan.
  • Scatter shredded mozzarella chesse in a single layer to over all the pizza sauce.
  • Arrange the sliced red onion, green bell pepper and chicken tikka pieces over the cheese. Drizzle a bit of olive oil on top. Additionally, I like to scatter a handful of shredded cheese over the tikka.
  • Bake the naan pizzas for 8-10 minutes or until the cheese has melted.
  • Optionally, sprinkle some chaat masala on the warm pizzas for added punch. You could also add bit of chopped fresh cilantro on top.
  • Slice and enjoy! I love to serve it with green chutney.

Notes

  • You could use regular pizza dough to make a pizza base in this recipe.
  • For added kick, add pickled jalapeno slices on the pizza before baking.
  • If you enjoy a sweetish bite to your pizza, scatter a hanful of sweet corn kernels before baking. They are so juicy and really complememt the spicy tikka.
